Seasons 2 pounds ground meat
½ cup very hot water
1 - 3.7 oz. package Chorizo Spice Blend
3 tablespoons apple cider vinegar
2 tablespoons Tequila reposado
2 pounds ground meat: pork, beef, turkey, duck
Stir Chorizo Spice Blend into ½ cup of very hot water, add vinegar and Tequila. Mix well to create a paste. Can be made a day ahead.
Combine 2 pounds of ground meat of your choice with the chile paste in a large bowl. For best results mix by hand until evenly blended. This mixture will stain your hands, try using food prep gloves for this step.
Cover the Chorizo with plastic wrap and let chill overnight, or even a day or two, to fully incorporate the flavors.
Separate into eight portions, 4 ounces each, and place in snack size zipper bags. Great to freeze for future use.
